We love to share great recipes around here, and one of our favorite things to do is to make something delicious while cutting calories! If you’ve never tried Cauliflower rice, you are in for a real treat! One of the reasons we use cauliflower instead of rice, is because it cuts the calories significantly, and it’s a different type of carbohydrate than rice.

Ingredients:
1 Tbsp. of Olive Oil or Coconut Oil
1 Avocados Chopped Finely
2 Fresh Limes, Juiced
1 Cup Fresh Finely Chopped Cilantro
1 Clove Mashed Garlic
1 Onion Chopped
1 Large Head Of Cauliflower
Zest of Lime (Maybe 1/2 teaspoon, taste it and you can always add more)
1 Cup Frozen Peas
1 Tsp. Sea Salt
1 Fresh Jalapeno (Optional)

Making the Cauliflower Rice: Heat a pan up and use the olive oil or coconut oil to cover pan. Saute the onion and garlic for about 10 minutes. While that is cooking, use a food processor to do a rough chop on the cauliflower. I find this is best done in small portions. You don’t want to over process it, or it comes out mushy. You want to have it the consistency of little rice pieces.

When the cauliflower is chopped, place in the pan. Then add Cilantro, lime juice, lime zest, peas, sea salt, and jalapeno. Cook until tender. Don’t over cook this. Pull off the heat and add the avocado. ENJOY!!!
